How to Make Custard

Introduction

Custard can be either boiled or baked. Boiled custard is a bit softer, and ready sooner, but baked custard cooks by itself with minimal attention. Creme brulee is made by caramelizing a layer of sugar on top of a baked custard.

Step 1: How to Make Boiled Custard

Boiled Custard Ingredients

  • 2 cups milk, heated
  • 3 eggs, lightly beaten
  • 6 tablespoons sugar
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 3/4 cup dark brown sugar, sifted

How to Make Boiled Custard

  1. Whisk the eggs, sugar, and salt in a heavy bottomed sauce pan.
  2. Add the hot milk in a slow stream, whisking constantly
  3. Cook over medium heat, stirring for 10 minutes, until small bubbles appear at the edge of the pan and the custard coats the back of the spoon.
  4. Remove from heat immediately, as you do not want the mixture to boil and curdle the eggs.
  5. Stir in the vanilla, cover, and chill. The custard will thicken as it cools.

Step 2: How to Make Baked Custard

Baked Custard Ingredients

  • 3 cups milk, heated
  • 2 egg yolks
  • 3 eggs
  • 1/2 cup sugar
  • 1 1/2 teaspoons vanilla
  • 1/8 teaspoon salt
  • Nutmeg, if desired

How to Make Baked Custard

  1. Preheat oven to 325 degrees.
  2. Prepare some boiling water for adding to baking dish
  3. Mix the egg yolks, eggs, vanilla, sugar and salt together in a mixing bowl.
  4. Add the hot milk slowly, stirring constantly.
  5. Divide custard among 8 buttered 4 oz. ramekins.
  6. Place ramekins in a baking dish, add boiling water to halfway up the sides of the ramekins.
  7. Sprinkle custard with nutmeg.
  8. Bake for about 45 minutes. A knife inserted into the center of the custard should come out clean.
  9. Serve warm or chilled

Step 3: Custard Variations

  1. Add flaked coconut to the custard mixture. You'll need 1/4 cup for the boiled custard, and 1/2 cup for the baked.
  2. Add 1 ounce melted unsweetened chocolate to the boiled custard, and 2 ounces to the baked.
  3. Add 1 tablespoon instant coffee powder to the boiled custard mixture, and 2 tablespoons to the baked.
