Step 1: Prepare Your Curry Powder
What you put in your curry powder is a matter of personal taste. For the recipe that follows you'll need 2-3 tablespoons of curry powder.- A basic curry powder might include:
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1/2 teaspoon chile powder
- 1/2 teaspoon turmeric
- Feel free to adjust the quantities up or down, to your taste.
- Additional spices you may wish to include in your curry powder are:
- Fenugreek seeds
- Caraway seeds
- Fennel seeds
- Cinnamon
- Cardamom
- Ginger
- Cloves
- Mace
Step 2: Saute Aromatic Vegetables with Curry Powder
Aromatic vegetables, such as onions and garlic, are typically used in all curries.- Sauté the curry powder you prepared in step 1 in 2 tablespoons vegetable oil.
- Add 1 cup chopped onion, and cook until soft.
- If desired, you can add 1-2 cloves of garlic (minced), a 1 inch piece of ginger (grated), and/or 1-2 green chile peppers (chopped)
Step 3: Add What You Like
- Add 3 cups of meat, vegetables, beans, or tofu to the pan, and saute until cooked. If you are using a mix of vegetables, add the longest cooking foods first.
- Add 1 can chopped tomatoes or 1 cup sour cream, or both. If using tomatoes, simmer for 15 minutes. Add the sour cream wen everything else is cooked, and just heat it through. Do not boil.
