Step 1: What You Need to Make Calamari
- 1 pound of squid, cleaned and sliced into 1/2 inch pieces
- 2 cups flour
- 2 cups buttermilk
- Enough vegetable to fill a large saucepan 3 inches high
- 2 tablespoons fresh parsley, chopped
- 1 large lemon, cut into wedges
- Salt and black pepper to taste
- A large saucepan
- 2 medium bowls
- A plate lined with a towel or paper towels
- A large slotted spoon
Step 2: Preparing and Frying the Calamari
- Heat oil in saucepan to 350 degrees
- Sift flour into bowl
- Add salt and pepper to the flour to taste
- Pour buttermilk into another bowl
- Dip pieces of calamari into the buttermilk and then into the flour
- Drop coated calamari into the oil in small batches
- Fry for about a minute, until calamari is golden brown
- Remove with slotted spoon
- Drain on towel
- Sprinkle with parsley
- Serve with lemon wedges
Step 3: Serving the Calamari
Although calamari is often served with an Italian marinara sauce, this is not necessarily the best choice for a dipping sauce. The heavy tomato flavor has a tendency to drown out the delicate flavor of the squid, so that all the taste buds can register is the sauce. A light aioli is a great choice, as it enhances the taste of the calamari rather than masking it.
