  • Whisk the wet ingredients in a bowl first.  When baking, remember that sugar is considered a wet ingredient.
  • Add the flour until smooth, with no lumps.
  • Add zest of the lemon to the mixture.
  • Heat the pan and grease with cooking spray or oil.  Once hot, turn heat to medium.
  • Pour enough batter in the pan to thinly cover its surface.  Move it around so it reaches all edges of the pan
  • Heat for about a minute until edges are golden.

You can fill your crepes with almost anything you want. If you plan to use a somewhat runny filling, make sure there are no holes in the crepes.

  1. Fill with a small amount of maple syrup, jam, chocolate sauce or caramel.
  2. Spread with apples for a healthy dessert.
  3. Slice up fresh strawberries or another fruit and mix them with sugar. Top the crepes with whipped cream.
