How to Make Coconut Date Oatmeal

Ingredients

Equipment

  • Large saucepan
  • Large wooden spoon
  • Serving bowl

Cooking Process

  1. Bring 1 cup of water to a boil in the saucepan.
  2. Add 1 cup of oatmeal to the hot water and stir. Then add 1 cup of coconut milk and stir everything together well.
  3. You can wait to add the dates until later, but Judith likes to add them to the cooking mix because the heat brings out the sweetness and they soften nicely. You can leave a few out, though, to top off the oatmeal at the end.
  4. Add your 1 tbsp of coconut to the saucepan and 1 tsp of agave nectar and stir well.
  5. Pour into serving bowl, top with the rest of the dates and enjoy!
