Cobb salad got its name from its creator, Robert Cobb, a chef at the Brown Derby restaurant. He prepared it as a late night snack for Sid Grauman, the operator of the Chinese Grauman Theater. Soon, the dish was popular among the Hollywood celebrities at that time.
You can learn how to make Cobb salad at home, the traditional way by following this step by step guide.
-
Tips
- Experiment with different kinds of lettuce and cheese.
- Use leftover chicken breast or rotisserie chicken to save time and give the dish more flavor.
- To check if the chicken is done, remove a piece from the pot and slit it open with a knife. If the inside is still pinkish, it is not done. The chicken must be fully white to be considered done.
- To save time, boil the eggs while you are washing and preparing other ingredients.
- Wash the vegetables before you chop or cut them so they will not lose the vitamins in the washing process.

Lobster Cobb Salad
In this video, Chef Steve Ricci shows you how to make the fancier variation of the Cobb salad by using lobster to replace the chicken.
Chef Steve Ricci cooks the lobster with butter and garlic. Then he uses a mix of lettuces, as well as other traditional Cobb salad ingredients such boiled eggs, tomatoes, and vinaigrette dressing. He serves it in non-traditional way by putting the lobster on top of the lettuce bed and scatters the tomatoes around.

Introduction
Cobb salad is a hearty and filling salad, combining chicken breast, vegetables, bacon, eggs, cheese, and vinaigrette dressing. You can serve Cobb salad as an entrée or as a main meal for light dinner or lunch. Cobb salad’s dressing is light, using red wine based vinaigrette instead of mayonnaise or dairy products. To serve lighter and healthier salad, omit the bacon and cheese to cut your calorie and salt intake. You can find all the ingredients at your local grocery store. It is preferable to use fresh ingredients instead of frozen ones. As with all raw dish, wash the vegetables thoroughly.
For the equipment, you only need to prepare a knife, a chopping board, a boiling pot, a frying pan, a bowl, and a whisk to make the dressing. To make Cobb salad from scratch you will need around 30 minutes. Wash your hands before preparing the salad.
This recipe is enough for 4 servings.
-
Step 1: Ingredients
- 2 skinless, boneless chicken breast, or pre-cooked chicken breasts.
- 4 eggs
- 4 stripes of bacon, sliced into small pieces
- 2 large ripe tomatoes

- 1 tsp of dry English mustard or Dijon mustard
- 1 clove garlic, finely minced
- salt and pepper
Step 2: Prepare and Arrange The Salad
- Boil the egg. Put the eggs in the boiling pot and immerse in cold water. Put the pot on stove, and set it to high heat. After the water is boiled, take away from the heat. Cover the pot and wait for 10 minutes.
- After the eggs are cooked, peel the eggs and chop into small pieces.
- Boil the chicken breasts. Slice the chicken breast into 4 pieces or more to reduce cooking time. Put the chicken in a pan and cover with water. Bring the water to boil on high heat. Turn down the heat and simmer for around 8 minutes more until fully cooked. Shred the chicken.
- Fry the bacon. Very lightly, grease the pan with olive oil and put in the bacon. Fry until the bacon is browned and crisp. Drain on paper towels.
- Wash the chives, lettuces and watercress under running water. Shred into bite sized pieces.
- Peel and cut tomatoes and avocados into small pieces. Shred or crumble the cheese.
- Arrange the ingredients on a plate or a bowl in rows, one ingredient at a row. Sprinkle the chives on top for decorations. You can also arrange them on individual serving plates.
Step 3: Make The Dressing
You should make the dressing right before you serve the salad.- Mix all the dressing ingredients except the olive oil in a small bowl.
- Gradually whisk in the olive oil.
- If the vinaigrette is too oily, add some water.
- Drizzle on top of the salad.

Method:
- Coat the chicken with the balsamic vinegar, seasonings, salt, and pepper. Set aside for 15 minutes.
