How to Make Chocolate Mousse for Valentine's Day Recipe

  1. Heat the hot water in the large saucepan to a simmer. Use enough water to fill about an inch up the rim of the saucepan.
  2. Place the chocolate, coffee and sugar in the large metal mixing bowl.  Mix to coat using the wooden spoon.
  3. Create a double boiler by placing the bowl of chocolate over the simmering water.  Allow the chocolate to melt, about two minutes, mixing it frequently using the wooden spoon or rubber scraper.
  4. Beat the egg whites for several minutes using the wire whisk or electric mixer until stiff peaks form.  Set aside.
  5. Whip the cream in the second mixing bowl using the wire whisk or electric mixer until it begins to thicken and ribbons are visible.
  6. Stir the egg yolks and orange liqueur into the melted chocolate using the wooden spoon.  
  7. Gently fold the egg whites into the chocolate using the rubber scraper.  Be careful not to stir too hard to crush the egg whites.  Mix until well combined.
  8. Fold the whipped cream into the chocolate mixture.  Again, be gentle with the rubber scraper or wooden spoon as to not reduce the volume of the mousse.
