Step 1: What You Need to Make Chocolate Ice Cream
- 2 oz unsweetened chocolate
- 1/3 c unsweetened cocoa powder
- 1 1/2 cups milk
- 1 cup sugar
- 1/8 teaspoon salt
- 2 egg yolks, beaten
- 1 tablespoon vanilla
- 1 cup heavy cream
Step 2: Make the Chocolate Custard
- Bring water to boil in the bottom of a double boiler.
- Melt the chocolate in the top of the double boiler.
- Whisk in the cocoa and heat until smooth.
- Whisk in the milk until completely blended.
- Stir in the sugar and salt, cooking until dissolved.
- Place the eggs in a bowl, and whisk in the chocolate mixture a little at a time.
- Return the chocolate mixture (with the eggs added) to the top of the double boiler.
- Place the top of the double boiler over the boiling water, and cook until thickened, whisking constantly.
- Chill several hours or overnight.
- Add 1 tablespoon vanilla, and mix well.
- Whip the cream and fold it into the chocolate custard.

- Make sure the custard has been chilled for several hours before beginning.
