Step 1: Choose your chicken wings and trim them

Uncooked chicken wings come in two different styles depending on the store that you buy them in and the butcher.

If your wings have the drum, flat and tip connected:

  1. Place the chicken wing down on a cutting board.
  2. Cut off the tip (the small finger type part near the end of the wing) and discard or save for stock / soup.
  3. Locate the joint of between the drum and the flat by pressing your thumb into the wing until you feel the indent.
  4. Chop the drum away from the flat at this point

If your wings are pre-trimmed and the flats and tips are connected:

  1. Ensure that there are no stray pieces of bone or skin left from the butchering process

Step 2: Decide on your sauce

The BBQ sauce is arguably the most important part of making chicken wing. Some chefs use flour to create a loose batter (as shown in the video) while others enjoy a soft, saucy wing. This step will show you how to make the later, a soft, saucy wing.

  1. Either purchase a store bought BBQ sauce or make your own

Step 3: Bake or Grill your wings

If you would like to grill your wings:

  1. Preheat your grill to 500 F
  2. Place a long piece of aluminum foil on the grill
  3. Place chicken wings on the aluminum foil

This prevents the chicken wing fat from dripping down and causing a flare up. You still get all of the great BBQ taste, just without the headaches of a fire.

If you would like to bake your wings:

  1. Preheat your oven to 450 F
  2. Place the chicken wings on a cookie sheet that has been coated with a non-stick spray.
  3. Allow to cook for approximately 45 minuets.
