Step 1: Tenderize
- Place one steak between two pieces of plastic wrap.
- Pound with meat tenderizer.
- Flatten to 1/4-inch thick.
- Set aside.
- Repeat with remaining portions.
- Pressed for time? Buy pre-tenderized cuts of beef.
Step 2: Dredge
- Season flour with salt and pepper to taste.
- Halve flour into two shallow plates.
- Beat eggs in a shallow dish.
- Set up your dredging station.
- Organize the plates into a line, according to the order you will dip the steak: flour, egg, flour.
- For best results, whenever dredging, always remember: dry, wet, dry.
- Coat a steak with flour.
- Then dip it into the egg.
- Finish by dredging in the flour.
- Repeat with each steak.
Step 3: Fry
Cover the bottom of the skillet with oil.
Heat until shimmering.
Fry the steaks in batches.
Steaks are done when the coating is golden brown, about three to four minutes.
Place steaks on paper towels.
Step 4: Make the Gravy
- Using the same pan you used to cook the steak, pour out all but one tablespoon of oil.
- Add one tablespoon of oil to the drippings.
- Over medium heat, whisk in two tablespoons of leftover flour.
- Cook until light brown and bubbling, about one minute.
- Whisk in milk, a little at a time.
- Make sure to scrape up the brown bits at the bottom of the pan.
- Stir constantly until thickened, about five minutes.
- Mixture should begin to bubble.
- Season to taste with salt and pepper.
