How to Make Classic Candied Sweet Potatoes

What You'll Need

  • Large pot
  • Single burner
  • 4 small glass bowls
  • 1 large glass bowl
  • Cutting board
  • Pot lid
  • Collander
  • Knife
  • 10-inch skillet
  • Wooden spoon

Step 1: Preparing the Sweet Potatoes

1. Fill a large pot with just enough water to completely cover six sweet potatoes, then move the pot onto the burner. Put in the six potatoes.

2. Cover the pot with the lid. Turn on the burner, and bring the water to a boil.

3. Reduce the heat to low. Simmer the sweet potatoes for 20-25 minutes or until tender.

4. Drain them, then let them cool on the cutting board.

5. Peel off the sweet potato skins. You should be able to do this by hand, with no peeler necessary. Dispose of the skins.







6. Cut one sweet potato in half lengthwise. The center of the sweet potato will still be quite hot, so handle it carefully. Take one half and flip it onto the cut side, then cut it into 1/2-inch slices.




7. Repeat #6 with the remaining sweet potatoes. Place them in the large glass bowl and put it aside.

Step 2: Candying the Sweet Potatoes

1. Heat the 10-inch skillet on low-medium on the burner, then add the butter. Keep the heat low enough to avoid burning the butter.

2. Add the water, the brown sugar, and the salt, and stir until bubbly and smooth. Continue to cook for one minute, letting the glaze set.




3. Add the sweet potatoes carefully, in order to avoid splashing the hot glaze. Toss until coated.



Variations

1. Another way to make candied sweet potatoes is in the oven. The sweet potatoes are sliced and the glaze added before baking. Bake at 350° for 30 minutes.c

2. Don’t forget the crock-pot method! Use butter on the insides of the crock-pot, add chopped sweet potatoes and ingredients for the glaze, then cover it. Cook it on a high setting for 2-3 hours, or go with a low setting for 4-6 hours.c

3. To add a citrus-y twist, consider a recipe that uses orange marmalade instead of brown sugar.c

4. Candied sweet potato recipes often include marshmallows, making for an even sweeter treat.c

5. Splenda brown sugar can be substituted for a diabetic-friendly version.
