Introduction
In order to make a really good Caesar Salad, you should be prepared to make the dressing fresh from scratch, preferably the same day you plan to serve the salad. Caesar salads appear deceptively simple, but there are a number of ingredients and steps involved.
Step 1: What You Need to Make Caesar Salad
To make approximately 4-6 servings of classic Caesar Salad, you will need the following:

Step 2: Make Your Caesar salad Dressing
The dressing is the heart of a good Caesar Salad.
- In your food processor, combine your anchovies, your egg yolks, your mustard, your garlic, your Worchestershire Sauce, your Tabasco Sauce and a fair amount of your pepper.
- Begin to blend your ingedients. Once the ingredients have had a chance to mix (about 10 seconds), start slowly adding the olive oil, a small stream at a time.
- After adding one cup of the oil, stop the food processor. Add 1 lemon's worth of lemon juice and the red wine and balsamic vinegars.
- Start the processor again, then blend in another 1/3 to 1/2 cup oil.
- Taste the dressing. You want it to be equal parts creamy and tart. If it is too creamy, add additional lemon juice, if it is too tart, add in the rest of the olive oil.
- Chill the dressing until use.
Step 3: Assemble Your Salad
- Pull the outer leaves off of your romaine lettuce heads, then wash and chop the leaves that are left.
- Place the lettuce in a wooden bowl - wooden bowls help bring out the Caesar salad flavors.
- Toss the lettuce with about half the dressing and the croutons. Add additional dressing as desired, then serve with parmesan cheese sprinkled on top.
