The recipe on this video uses a different ration of ingredients than the recipe on this page uses. It uses uses 2 tablespoons of butter, 1 1/2 cups of brown sugar, 4 cups of milk, 3 tablespoons of cornstarch and 4 eggs. the eggs are added separately from the cornstarch.
Introduction
The flavor of butterscotch comes from the combination of butter and brown sugar. This pudding is thickened using both cornstarch and eggs, making it a cooked custard, rather than a true pudding. Serve chilled, topped with whipped cream, if desired.
Step 1: Butterscotch Pudding Ingredients
- 4 tablespoons unsalted butter
- 1 cup dark brown sugar
- 3/4 teaspoon salt
- 3 tablespoons cornstarch
- 2½ cups whole milk
- 2 large eggs
- 1 teaspoon vanilla extract
Step 2: How to Make Butterscotch Pudding
- Melt the butter in a saucepan, and ad the sugar and salt.
- Remove from heat.
- Whisk the cornstarch with 4 tablespoons of milk until smooth, and then whisk in the eggs.
- Add the remaining milk to the butter and brown sugar mixture. Blend until smooth.
- Add the egg and cornstarch mixture.
- Whisk over medium heat for about 7-10 minutes until small bubbles appear at the edge.
- Reduce heat to a simmer, and cook for one minute, whisking constantly.
- Remove from heat and add the vanilla.
- Refrigerate until well chilled.

- Add 2 teaspoons scotch whiskey with the vanilla
- Top with sliced bananas that have been sauteed in butter and brown sugar.
- Replace milk with half and half for a creamy pudding; use skim milk for a lighter dessert.
