Step 2: How to Make Butterscotch
- Put the dark corn syrup, sugar, water, and light cream into a saucepan, and blend well.
- Clip the candy thermometer to the side of the pan, making sure that the bulb is completely submerged and the temperature reading can be easily seen.
- Cook the mixture over medium heat, stirring constantly until it comes to a boil
- As soon as the mixture reaches a boil start watching the candy thermometer.
- When the temperature reaches 260 degrees, stir in the butter.
- Continue cooking, stirring occasionally, until the temperature reaches 280 degrees.
- Remove from heat and pour into the buttered pan.
- Allow to cool, and when it is almost firm, cut into bite size pieces.
- Cool completely and remove from pan.
