Ingredients
- 1 medium spaghetti squash (2 1/2-3 lbs)
- 1/2 cup Parmesan cheese, shredded
- 3 tbsp butter, cut into pieces
- 1 tbsp basil, oregano or parsley, chopped
- 1/4 tsp salt

Servings: 6, Prep time: 20 minutes, Total time: 50 minutes
Step 1: Bake the Squash
Preheat your oven to 350° F (176° C). Cut your spaghetti squash lengthwise and scoop out all the seeds and stringy part. Place the two halves in your baking dish cut side down and pierce the skin all over with a fork. Cook for 30-40 minutes or until tender.
Step 2: Make the "Noodles"
Let cool for a few minutes then pick up each half with a towel or oven mitt. Using your fork, scrape the squash into your mixing bowl to create spaghetti-like strings.
Step 3: Mix the Ingredients
Add the butter, half of the Parmesan cheese, basil (or other herb) and salt. Mix together until the butter is melted. Sprinkle the remaining Parmesan cheese on top. Plate and serve.
