Making Blackberry Jam
This video demonstrates how to make blackberry jam. The chef in the video uses a strainer to remove the seeds before making the jam, which is not necessary for jams which usually contain some seeds. She also uses pectin to help thicken the jam, which is also not needed as blackberries should have enough natural pectin to thicken on their own. Adding pectin does speed up the process, however.

Step 1: What You Need to Make Blackberry Jam
- 4 - 5 cups blackberries, washed and picked over
- 3 cups sugar
Step 2: How to Make Blackberry Jam
- Run the berries through a Foley Food Mill to remove the seeds. Measure out 4 cups of blackberry puree.
- Place the blackberry puree in a heavy pot, and cook for 15 minutes..
- Add the sugar and bring the mixture to a boil.
- Insert a cooking thermometer, and continue to simmer until the mixture reaches 214 degrees, stirring constantly.
- Remove from heat and allow to cool.
Step 3: Blackberry Jam Variations
- Add 2 tablespoons of Chambord to the jam after you remove it from the heat.
- Substitute up to 2 cups of the blackberries with raspberries or blueberries for a mixed berry jam.
- Freeze or process in a hot water bath.
