Step 1: Gather Your Ingredients
- 2 tbsp. olive oil
- 1 large onion, chopped
- 3-4 cloves garlic, minced or crushed
- 1/4 cup bell pepper, any color, chopped
- 1 tsp. ground cumin
- 1 tsp. salt
- 3 15 oz. cans black beans, drained, reserving 1 cup liquid
- 1 14 oz. cans broth, chicken or vegetable work best
- 1 28 oz can diced tomatoes
- 1-2 tsp. hot sauce
Step 2: Prepare Black Bean Soup
- Cook the onion, garlic, bell pepper, cumin and salt in olive oil in a large saucepan until the onions are golden brown.
- Add the beans, reserved liquid, broth, tomatoes and hot sauce.
- Cook over medium heat for 15-20 minutes or until the flavors blend and the mixture is heated through.
- Transfer one half of the mixture to a blender or food processor and blend until smooth. Be very careful as the mixture will be extremely hot.
- Repeat with the second half of the mixture, carefully blending until smooth.
- Ladle into serving bowls and enjoy!
Step 3: Black Bean Soup Variations
- Dried beans can be used in place of canned, simply cook and drain them ahead of time.
- Beans can be pureed before adding them to the soup if desired.
- Bacon or ham can also be added for additional protein.
