How to Make Black Bean Burritos

Black bean burritos are a delicious twist on the traditional pinto bean variety. This recipe uses authentic Mexican flavors to create a hearty, spicy meal. Read on to learn how to make black bean burritos.

Burrito literally means little donkey in Spanish, possible because the shape is similar to a donkey's ear. Burritos are stuffed with a variety of fillings, from eggs in breakfast burritos to chili in some more Americanized versions. This recipe below has a bit of a smokey flavor from the black beans, heat from the jalapenos, creaminess from the cheese, tartness from the tomatoes and a bit of cooling from the sour cream and lettuce.

Step 1: Ingredients for Black Bean Burritos

This will make 4 burritos:

  • 16 ounces black beans, cooked
  • 1 small bell pepper, sliced
  • 1 small red pepper, sliced
  • 1 jalapeno, sliced
  • 1/2 red onion, sliced
  • 2 cloves garlic
  • 2 tablespoons vegetable oil
  • 1 small tomato, diced
  • 2/3 cup shredded lettuce
  • 4 ounces cojito cheese
  • 1/4 cup salsa
  • 1/3 cup sour cream
  • Salt and black pepper

Step 2: How to Make Black Bean Burritos

  1. Melt butter in medium skillet over medium heat
  2. Add onions and bell pepper
  3. Saute 5 minutes
  4. Add garlic
  5. Salt and pepper to taste
  6. Saute until veggies just start to brown
  7. Add black beans and heat until warm
  8. Heat tortillas in microwave, wrapped in slightly damp paper towels, for 60 seconds
  9. Spread a layer of bean/veggie mixture in a strip down the middle of a tortilla
  10. Top with cheese
  11. Top with jalapeno, tomato, lettuce, salsa and sour cream
  12. Roll up and tuck edges
  13. Repeat with all tortillas
