- Melt butter in medium skillet over medium heat
- Add onions and bell pepper
- Saute 5 minutes
- Add garlic
- Salt and pepper to taste
- Saute until veggies just start to brown
- Add black beans and heat until warm
- Heat tortillas in microwave, wrapped in slightly damp paper towels, for 60 seconds
- Spread a layer of bean/veggie mixture in a strip down the middle of a tortilla
- Top with cheese
- Top with jalapeno, tomato, lettuce, salsa and sour cream
- Roll up and tuck edges
- Repeat with all tortillas
