Introduction
Belgian waffles are a larger version of a regular waffle. Made with a special waffle iron with deeper indentations, they hold lots of melted butter and maple syrup at breakfast, and work equally well topped with ice cream and hot fudge sauce for dessert. -
Step 1: What You'll Need to Make Belgian Waffles
- Belgian waffle iron
- 2 cups of flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 4 whole eggs, separated
- 1/2 teaspoon vanilla
- 4 tablespoons unsalted butter, melted
- 2 cups milk, room temperature
- Non stick cooking spray, for waffle iron
Step 2: How to Make Belgian Waffles
- Preheat the waffle iron.
- Combine the flour, baking powder, and salt in a bowl large enough to hold all the batter, and set aside.
- Whisk the egg yolks and sugar until the yolks are pale yellow.
- Add the vanilla, butter, and milk to the eggs mixture and whisk to combine.
- Add egg-milk mixture to the bowl containing the flour mixture and mix gently. Do not over beat
- Beat the egg whites with an electric mixer with clean beaters about 1 minute, until they have reached the soft peak stage.
- Gently fold the egg whites into the waffle batter.
- Spray the preheated waffle iron with non-stick cooking spray.
- Ladle batter into the waffle iron, per the manufacturer's instructions. Most waffle irons will take 2/3- 1 cup of batter, but some may hold more.
- Close and cook until golden brown, which will take 2 to 4 minutes, depending on your waffle iron.
Step 3: Belgian Waffle Hints and Tips
- You can eliminate the baking powder, and substitute a package of yeast. If you do this mix the batter the night before, with the exception of beating and mixing in the egg whites. Refrigerate the batter, and allow it to sit overnight, bringing it to room temperature before proceeding in the morning.
- Substitute fruit sauce and whipped cream for maple syrup and butter.
- Freeze leftover waffles individually, so you'll have them available for an impromptu Belgian waffle ice cream sundae feast.
