How to Make Beef Stock

Do you need a great beef stock recipe? Soup is the ultimate comfort food, and homemade beef stock is the basis for a number of great soups, including beef noodle and beef vegetable soup. How to make beef stock will teach you how to make rich beef broth that will ensure you make great tasting soup.

Introduction

In order to make beef stock, you'll need soup bones and soup meat. Make sure to use lean meat, as too much fat is neither healthy nor tasty. You can roast the bones before making the stock, if desired. Roasting will produce a richer flavored beef broth

Step 1: What You Need To Make Beef Stock

  • 1 1/2 pounds beef soup bones
  • 3 pounds lean soup beef
  • 1 cup carrots, peeled and sliced
  • 1 celery rib, chopped (with leaves)
  • 1 cup onion, chopped
  • 1 medium white turnip, peeled and chopped
  • 1 bouquet garni (see step 2)
  • 2 teaspoons sugar
  • Salt, if desired
  • 8 cups water

  1. Lay the cheesecloth on a work surface.
  2. Place the herbs and spices on the cheesecloth.
  3. Gather up the corner of the cheesecloth, forming a bundle.
  4. Secure with kitchen string.

Step 3: How to Make Beef Stock

  1. Combine all ingredients in a soup pot.
  2. Bring to a boil.
  3. Reduce heat to a simmer, and cook, covered, for 3 hours.
  4. Strain and refrigerate overnight.
  5. Remove the congealed fat before using, if desired
