How to Make BBQ Pork Ribs

What You'll Need

Ingredients
  • 10 tbsp chili powder
  • 1/2 cup light brown sugar
  • 6 tbsp minced garlic
  • 2 tbsp coarse salt
  • 2 racks (2 1/2 pounds each) pork spare ribs
  • 3 tbsp olive oil plus additional for brushing
  • 2 large onions, chopped
  • 2 cups ketchup
  • 2 cups strong coffee, brewed
  • 1/3 cup apple cider vinegar

Step 1: The Rub

1. Preheat oven to 350º F (177º C). Preheat grill to moderately high heat. Mix four tablespoons chili powder, a quarter cup brown sugar, two tablespoons garlic and two tablespoons coarse salt in a small bowl.




2. Pat ribs dry and place in lightly oiled baking pan. Cover both sides of ribs with rub. Bake in oven for 30 minutes.

Step 2: BBQ Sauce

1. While ribs bake, pour oil in saucepan. Add onions and cook at high heat for eight minutes, stirring occasionally, until softened.

2. Add remaining chili powder and garlic. Sautee for one minute. Add ketchup, coffee, apple cider vinegar and remaining brown sugar. Stir occasionally for 40 minutes until reduced to four cups.

3. Reserve two cups. Set the rest aside.

Step 3: Grilling

1. Once ribs finish baking, remove and brush tops with barbecue sauce. Place ribs on grill sauce-side down. Grill for five minutes. While grilling, baste the other side of each with sauce. Turn ribs and grill for five minutes.

2. Remove with tongs and place on serving platter. Serve alongside remaining barbecue sauce.
