  • 1 cup cold, strong, brewed coffee

  1. Preheat oven to 375 degrees F.
  2. Line 2 muffin pans with cupcake liners.
  3. Cook the bacon until brown. Drain, and crumble into small pieces.
  4. Combine flour, 3/4 cup cocoa powder, sugar, baking soda, baking powder and salt in a mixing bowl.
  5. Whisk to combine.
  6. Add the eggs, coffee, buttermilk and oil.
  7. Stir just until blended - do not over mix.
