Step 1: Assemble your ingredients
For this easy breakfast, you will need the following ingredients: Note that this easy breakfast will comfortably feed two people.- 4 Large Eggs
- 2 Medium sized white potatoes
- 4 slices of bread
- Garlic Powder, salt, pepper
- 1 skillet and stir stick
- 1 plate
- 1 bowl
Step 2: Mix and Cook!
- Wash and dice the potatoes. Cubing the potatoes into 8 chunks works well.
- Place the potatoes on a plate and place uncovered in the microwave on high for 10 minuets.
- Place the 4 slices of bread in the toaster. Do not start toasting them just yet, place them in the toaster so that they can be quickly and easily put down when you're ready. No one likes cold toast!
- Crack 4 eggs into a bowl
- Add 1/4 cup of cold water
- Whisk the eggs. Your goal in whisking is not only to combine the eggs but to add air to the eggs so that they are fluffy.
- Heat a skillet on high. Place a small amount of butter and a small amount of extra virgin olive oil in the pan. Reduce heat to medium.
- Pour eggs into skillet and whisk constantly until the eggs start to thicken.
- Your potatoes should be done in the Microwave. If a fork can slide easily into them, they are cooked adequately.
- Season potatoes with salt and pepper
- Remove eggs from pan when complete and set aside on a clean serving dish
- Turn burner to high. Again, add butter and extra virgin olive oil.
- Place potatoes in skillet and mix to coat them with butter and oil.
- Start the toaster. Push the lever down to cook the toast.
- Remove the potatoes when they being to brown. Place them on a serving dish.
- If you have timed the potatoes correctly, your toast will pop up just as you plate the potatoes.
Last, serve and enjoy your simple, healthy breakfast. This is a great breakfast to have on the weekends. Clean up is easy it tastes great!
