Almond Pudding with Almond Milk
Ingredients:
- 2 cups almond milk
- 1/2 cup cream
- 3 tbsp sugar
- 1 packet gelatin
- 1 tsp orange extract
Method:
- Put the almond milk, cream, and sugar in a saucepan and simmer, but do not boil.
- Take 2 spoonfuls of the hot mixture and dissolve the gelatin in it.
- Add the dissolved gelatin into the mixture and stir to mix.
- Remove from heat. Pour the mixture into a large pudding mold or several individual pudding molds or ramekins.
Almond Milk
Almond milk is not a dairy product. It is made by combining ground almonds and water. To make 2 cups of almond milk, grind 1 1/2 cups of almonds to a paste in a food processser or blender. Add 1/2 cup of water and process until smooth.
Asian Jelly Almond Pudding
Ingredients:
- 1 packet/ 2 tsp of agar-agar powder
- 5 cups of milk
- 3 tbsp sugar
- 1 can fruit cocktail
- 1 tsp almond extract
Method:
- Boil the agar-agar powder with milk and sugar, stirring constantly.
- After the mixture is boiled, add the almond extract and stir to mix.
- Pour the mixture into a pudding or jelly mold. You can also use individual molds.
- Cool for 30 minutes, and then chill until set in the refrigerator. This will take 2 hours to overnight.
- Open the canned cocktail fruits. Reserve the syrup.
- Cut the pudding into cubes if you use a big mold, or loosen the individual pudding mold. Transfer the pudding to ice cream glasses or dessert glasses which are shaped like a bowl (not tall sundae glasses). Serve with the cocktail fruits and drizzle with the reservedsyrup.
