Introduction
- If you're looking to fill up on the cheap, a burrito is definitely the way to go. Even the vegetarian versions are so hearty that nobody will be left hungry -- or missing the meat. For a juicy, saucy, extra-flavorful treat, try your burrito smothered in spicy vegetarian green chile sauce.
Main Fillings
- Grilled, barbecued or sauteed chopped vegetables (eggplant, zucchini, bell pepper and onion make a good combo)
- Fried or mashed potatoes
- Pinto beans, plain or refried
- Black beans, plain or refried
- Rice
- Corn
- Ground-beef style veggie protein (such as Morningstar Crumbles or SmartGround), cooked with taco seasoning
- Eggs (for breakfast burritos)
Green Chile Sauce
- Use this flavorful sauce recipe if you enjoy your burritos "smothered," or "wet".
- 6 Cups vegetable stock
- 1 Pkg. Ground-beef-style vegetable protein (optional)
- 10-15 Green chiles (the New Mexico Hatch variety works well), roasted, peeled and chopped coarsely
- 1 Onion, chopped
- 4 Cloves garlic, chopped
- 2 Tbsp. Canola oil
- 2 Tbsp. Flour
- 2 Tbsp. Lime juice
- 1 tsp. Salt
- 1/2 tsp. Black pepper
- 1/2 tsp. Cumin
- Cayenne pepper to taste
- Saute onion, garlic, and chiles in oil. Add stock, lime juice, vegetable protein (if using), salt, and spices. Bring to a boil, then sprinkle in flour. Simmer for about 40 min.
Step 2: Construct
- Once your ingredients are on hand, you may begin to build your burrito:
- Warm tortillas on a grill, or by microwaving for 30-60 seconds
- Spoon your main filling onto a tortilla, arranging into a line down the center
- Add toppings now, or you can fold first and spoon or sprinkle them on top of the rolled burrito
- Fold one short end of the tortilla up about 2 inches over the filling
- Fold both long sides over it, so that one overlaps the other (fold as tightly as possible)
- Fold the other short end inwards, pushing it underneath the long folds
- Top with green chile sauce followed by additional toppings, if desired
Serving Suggestions
- Grilled veggies and cheese inside, topped with guacamole, tomatoes and lettuce
- Refried black beans, cheese and avocado inside, topped with green chile sauce and more cheese
- Pinto beans, rice, salsa, and guacamole inside, topped with sour cream, tomatoes and lettuce
- Eggs, fried potatoes and salsa inside, topped with green chile sauce and cheese
