How to Make a Lime Rickey Cocktail

The Lime Rickey, or Gin Lime Rickey, is a cocktail named after Colonel Rickey, an English officer. The Lime Rickey is also known as a Gin Rickey. Read on to learn how to make a Lime Rickey cocktail.

Introduction

This is a very easy cocktail to make. You just need lime, gin, club soda and ice.

Step 1: What You Need

For one drink, you'll need:

  • 1/2 Lime
  • Thin slice of lime peel
  • 1-1/2 oz. gin
  • Club soda
  • Ice cubes
  • A highball glass
  • A stirrer

Step 2: How to Make a Lime Rickey

  1. Place the ice cubes in the highball glass.
  2. Squeeze the lime into the glass.
  3. Drop the lime peels into the glass
  4. Add gin, then fill the glass with club soda.
  5. Stir and serve.

Step 3: Lime Rickey Variations

  1. Make a non-alcoholic Lime Rickey by replacing the gin with additional club soda. Add a few drops of bitters.
  2. Replace the lime peel with lemon, if desired.
  3. You can garnish the drink with a wedge of lime.
  4. Add simple syrup to taste, if you desire a sweetened drink.
