The Bellini is a light, peachy Italian cocktail. It is an excellent choice to serve at outdoor parties and get-togethers. It looks complicated, but it is actually quite easy to learn how to make a bellini.
Introduction

Step 1: Peaches
White peaches are a main ingredient in the Bellini. However, they are not always available or in season, so you may have to do some improvising. One solution is to buy white peach puree, if you can find it. If you can't get hold of any, you may substitute any type of peach or peach puree. This is actually preferable to using fresh peaches when they are not in season. That is because they will be inferior in flavor and texture. Packaged peaches have been picked at the peak of freshness in the summer months, and therefore the fruit will be of much better quality.

Step 2: Gather Ingredients
You will need 1/2 peach (pureed in a blender) and about 4 ounces of sparkling wine per drink. If you wish to be completely authentic, use white peaches and Proseco. You can also substitute Champagne, or any other sparkling white wine.
Step 3: Pouring
Pour your peach puree into champagne glass. Top with sparkling wine. Begin your pour slowly, so that the drink does not foam over the top of the glass. For garnish, cut a slit into a peach slice and attach to the rim of your champagne glass.
