Introduction
- Grilling is a great method to add some flavor to vegetables. It's also healthier than boiling because the process of boiling vegetables results in the loss of more nutrients than grilling. Vegetables are both quicker to cook and healthier than grilled sausages, meat or chicken.

Step 1: Choosing Vegetables
- There are many options to choose from if you want to grill vegetables.
- Some popular choices that work well for grilling are mushrooms, zucchini, eggplant, squash, peppers, corn, tomatoes, onions and eggplant.
- You can also bake potatoes on the grill.
- Lettuce and other leafy greens do not work as well for grilling.

Step 2: Seasoning
- There are endless options for seasoning vegetables before grilling them. Make sure to wash the vegetables before preparing them and cut them into smaller pieces for quicker and more even cooking.
- Vegetables can be delicious when grilled just as they are or by adding some seasoning, such as salt and peppar, before grilling them.
- You can also create a marinade and add it to the vegetables before grilling them. Let the vegetables sit in the marinade for about 15 to 30 minutes, depending on how strong marinade flavor you want.
- Common ingredients for marination include lemon juice, olive oil, vinegar, soy sauce, salt, pepper, italian seasoning and fresh or dried herbs such as rosemary, basil or oregano.

Step 3: Grilling Method
- There are several methods to grill vegetables. Make sure to wash the vegetables before preparing them.
- A common way to grill vegetables is by cutting them up in smaller pieces and placing them on grill skewer. This method allows for the vegetables to cook quickly without falling through the grill rack.
- You can also wrap vegetables in aluminum foil before placing them on the grill. This allows you to add more seasoning and sauces without it dripping off and tend to result in more juicy vegetables. Potatoes are best baked on the grill by this method.
- You can also grill vegetables in a grilling basket.

Step 4: Grilling Time
- Before starting to grill, knowing approximately how long the vegetables will take can help you plan the grilling, especially if you are also grilling meat, chicken or fish, which typically takes longer.
- Vegetables that generally get ready between 3 to 4 minutes include bell peppers, eggplant, onions, tomatoes, zucchini and squash.
- Mushrooms and corn take a few minutes longer.
- Potatoes usually take about half an hour or longer.

Step 5: Grilling

- Add the vegetables to the grill to a medium-hot grill. If using a charcoal grill, this means that some of the charcoal is covered in ashes.
- The time recommendations above is just general guide. You might want to grill the vegetables shorter or longer, depending on taste.
- Turn the vegetables often.
- If desired, brush on more marinade during the grilling.
