Introduction
- Although not as common a preparation method as boiling or steaming, grilling allows you to cook lobster outdoors without the need to clean a 20 gallon lobster pot.
Step 1: How to Grill Lobster
What You Need to Grill Lobster
- Live lobster
- Chef's knife
- Charcoal or gas grill
- Tongs
- Melted butter
Preparing the Lobster for Grilling
- When you boil or steam a lobster, you place it into the pot live and it is killed instantly by the hot water or steam. In order to grill a lobster, you need to kill it first.
- You can kill the lobster by boiling it for two minutes.
- You can also kill it by taking a sharp chef's knife and slicing through the lobster where the head meets the body, severing the spinal cord.
- After killing the lobster, lay it on its back, and use a chef's knife to split it down the middle. This will allow the lobster to lay flat while cooking, and, as a result, cook more evenly.
Grilled Lobster Instructions
- Preheat your gas grill to high, or allow your coals to reach the stage where you can only keep your hand six inches above them for one to two seconds.
- Cook for 10 minutes, turning and basting occasionally with melted butter. The shell will turn red, and the meat will turn white as the lobster cooks.
Step 2: Grilled Lobster Tips
- Substitute barbecue sauce for the butter while basting.
- If the lobster seems to be cooking slowly, cover it with a tent of aluminum foil to hold in the heat.
- Herbs or aromatic wood can be placed on the lava rocks or coals to flavor the lobster while it grills.
- Poultry shears may make it easier to slice the lobster open, particularly at the tail end.
