Ingredients and Equipment
- 1 eggplant (cleaned, peeled, sliced and salted)
- 3 tsp olive oil
- 1 spatula
- 1 grill or grill pan
- 1 baking sheet
- Parchment paper

Prepare the Eggplant
1. Spread the parchment paper over the baking sheet and lay out the eggplant slices on top.
2. Drizzle the olive oil over the slices, rubbing it in with your hands to ensure the oil has been evenly dispersed over the slices.
3. Turn the slices over and repeat.
Grill the Eggplant
4. Place the oiled eggplant slices on the grill, allowing them to cook on one side for 2-3 minutes, until the color begins to turn grey with pronounced grill marks visible.
5. Flip the slices and repeat.
6. Remove from the grill and place on a plate to serve.
