Grilled Artichoke Recipe
- Clean and trim your artichoke. Be sure to cut off both ends cleanly.
- Cut the artichoke in half vertically and scoop out the inner purple portion with a spoon.
- Place the pot on a burner over high heat.
- Fill the pot with enough water to cover the bottom 1/3 of your artichoke when laying flat.
- Salt the water and allow it to come to a rolling boil.
- Place both artichoke halves in the water with the inner portion resting on the bottom of your pan and place the cover on the pot.
- Boil the artichoke halves for 15 minutes if you plan to use a grill pan or 7 to 10 minutes if you will use a traditional grill. A grill pan does not produce the same level of heat, so the extra cooking time is necessary to offset the difference in cooking temperature.
- Turn off the heat and carefully remove the artichoke halves from the water and allow them to cool sightly.
- Coat a grill pan with olive oil. If you are using a regular grill, you can bypass the oiling process.
- Allow the grill or grill pan to heat to a high temperature.
- Coat each artichoke half generously in olive oil. Use your hands or a brush to coat the outside and inside of the artichoke.
- Add salt and pepper to taste.
- Place the cut side up and grill for approximately 10 minutes. Press down on the artichoke halves to increase the surface area that is in direct contact with the grill.
- Flip the artichoke halves over once they have sufficient grill marks and are soft to the touch.
- Grill them cut-side down an additional 10 minutes.
