Introduction
- Based on the successful Rice Diet Program that was founded by Dr. Walter Kempner in Durham, North Carolina in 1939, the rice diet focuses on lowering salt intake and promises to help treat health conditions such as diabetes, kidney disease and hypertension. Step 2: Purchase The Foods

- The high-fiber foods that you purchase may have a high sodium content, so be sure to read the labels and look for the low-sodium brands. A multi-vitamin is suggested, and the foods that are allowed are:
- Beans
- Fruits
- Lean protein
- Whole grains including brown rice
- Vegetables
- Nonfat dairy products
- Fish

Step 3: Begin The Eating Plan
- Phase one is the detox phase and limits calorie intake to 800 per day. Eat fruits and whole grains, and limit this detox to one day per week. The meals should include 5% fat, 6% protein and 89% carbohydrates.
- Phase two adds carbohydrates, vegetables and beans to the fruits and whole grains in phase one. The addition of vegetables increases the sodium levels in this phase so it is safer to remain in this portion of the diet for a longer period. The meals should include 7% fat, 13% protein and 80% carbohydrates.
- Phase three takes place mainly after weight goals have been attained and includes the addition of protein and non-fat dairy daily, with a serving of fish, one day per week. Daily food percentages should be 10 to 20% fat, 15% protein and 65 to 75% carbohydrates.

- The rice diet is severely restrictive and may cause boredom with the allowed food choices, but the plan has been known to cause rapid weight loss and a healthier body.
