How To Debone a Chicken

Introduction
You can save a lot of money by boning chicken yourself. Purchase a whole chicken when its on sale, and cut it up and bone pieces as needed. You'll wind up with chicken cut the way you need it, and you'll have a carcass which will make a great basis for chicken stock. Make sure you have a sharp knife with a thin blade. -
Step 1: How to Cut Up a Whole Chicken
- Place the chicken breast side down on your work surface.
- Cut through the backbone along the spinal column.
- Cut through the wing joint at the shoulder. Repeat for the other wing.
- Wiggle the leg and feel around to locate the socket hat connects the thigh to the body. Cut through the socket to remove the leg. Repeat for the other leg.
- Cut each thigh from the drumstick at the joint.
- Cut away the side of the breast that's still attached to the back.
- Slice the breast in half.
You now have 8 pieces of chicken, as well as some stray parts you can use for stock. The pieces can be fried, broiled, baked, or grilled as is, or you can continue to bone the chicken.

Step 2: How to Bone a Chicken Breast
- If you did not cut the breast in half in step 1, do that now.
- Using your knife, scrape the meat away from the breastbone, tugging it as you go.
- If the breast is very thick, you can use your knife to slice it in half.
