How to Debone a Turkey
This video details how to remove the bone from a turkey leg. In this method, the chef makes a slit in the leg, leaving the breast skin intact. The leg is flipped back so that the chef can access the bone. He cuts through the leg joint and removes the leg entirely from the turkey. He then places the leg skin side down and removes the thigh bone. He also shows how to remove the bone from the drumstick.
Step 1: Remove the Backbone
- Place the turkey breast side down.
- Slice long side either side of the back bone.
- Remove the backbone and discard or save for turkey stock.
- Reach into the turkey and remove the giblets and neck. Discard or save for another use. Don't use the giblets for stock- they will give it a bitter taste.
Step 2: Remove the Breast Bones
- Slide a knife between the ribcage and the meat, being careful to keep the sharp edge of the knife angled towards the bone.
- Slice through the joint connecting the wing, and continue down to the breastbone.
- When you reach the point where the thigh connects to the breast, pull the leg backwards, snapping the joint.
- Cut through the cartilage and complete separating the rib cage from the meat.
- Repeat on the other side.
- Slice carefully around the breast bone, being very careful not to pierce the skin.
Step 3: Remove the Thigh Bones
- Using the knife, remove the meat from the upper thigh, and remove the bones that were left after separating from the breast.
- Slice around the thigh bone.
- Bend back the drumstick, popping the joint.
- Cut through the cartilage and remove the thigh bone.
