Jalapeños are often used fresh, roasted, or pickled. It is normally used in fresh salsas and other spicy dishes. On the other hand, pickled jalapeños are usually used as condiments while some are used sparingly in guacamole or salad dressings.

Buying and Storage Tips

When buying, always go for firm and smooth jalapeños. Avoid the ones with mold spots. Store fresh jalapeños in a paper bag and place it in the refrigerator for longer shelf life.

On the contrary, dried jalapeños can be stored in a sealed container and are relatively good for six months. Canned jalapeños are good for one year if unused, but once opened, better refrigerate for a week or freeze for up to six months.http://www.bigoven.com/glossary/Jalapeno

Proper Handling and Cutting

To get started, wash the jalapeños right before slicing. Remove the stem or leave it intact then cut the pepper in half.

Use a teaspoon to remove the seeds and inner membrane. For safety, try to wear thin rubber gloves or wash your hands with soap and water once finished.

You can also slice jalapeño peppers depending on usage. For example, you can cut them in two separate sections or put each section cut- side down and slice thinly.
