How to Cook Zucchini

Zucchini are a variety of vegetable marrow, a summer squash. They are tender and tasty when young, but most varieties are tasteless when large and overgrown. Mild bitterness in zucchini, like that in related species like cucumbers, may be as a result of environmental factors such as high temperature, low moisture, low soil nutrients, etc. The bitterness is caused by compounds called cucurbitacins. Method 1: How to Steam Zucchini

What You Need to Steam Zucchini

  • 1 cup sliced zucchini per person
  • 2 - 3 teaspoons melted butter per person
  • Salt and pepper, as desired
  • Pot with steamer insert

How to Steam Zucchini

  1. Fill your pot with water, stopping at the base of steamer insert.
  2. Place chopped zucchini in steamer basket.
  3. Bring the water to a boil.
  4. Turn heat down to a simmer.
  5. Steam until zucchini is tender when pierced with a fork, about 5 - 10 minutes.
  6. Season with butter, salt, and pepper as desired.

Method 2: How to Saute Zucchini

What You Need to Sauté Zucchini

  1. 2 tablespoons olive oil
  2. 2 teaspoons garlic, minced
  3. 3 medium zucchini, sliced thin
  4. 2 tablespoons chopped fresh basil, thyme, oregano or marjoram
  5. Salt and pepper

How to Sauté Zucchini

  1. Pour olive oil into frying pan.
  2. Saute garlic just until color starts to change to a light gold.
  3. Add the zucchini to the pan.
  4. Saute until tender, about 5-10 minutes.
  5. Add herbs, mix well, and continue to cook for another minute.
  6. Add salt and pepper to taste.

Method 3: How to Roast Zucchini

What You Need to Roast Zucchini

  1. 2-3 medium zucchini , sliced
  2. 1/4 cup olive oil
  3. 1/4 cup cup fresh herbs, if desired
  4. Salt and pepper
  5. 1-2 cups other chopped vegetables such as peppers, onions and/or mushrooms
  6. Nonstick cooking spray

How to Roast Zucchini

  1. Preheat oven to 400 degreesF.
  2. Lightly grease a 9 by 13 inch roasting pan with nonstick cooking spray.
  3. Place the vegetables in the prepared roasting pan.
  4. Toss vegetables with olive oil, herbs and salt and pepper.
  5. Place pan in preheated oven and bake for approximately 30 minutes, or until tender.
