- Fill your pot with water, stopping at the base of steamer insert.
- Place chopped zucchini in steamer basket.
- Bring the water to a boil.
- Turn heat down to a simmer.
- Steam until zucchini is tender when pierced with a fork, about 5 - 10 minutes.
- Season with butter, salt, and pepper as desired.

- Pour olive oil into frying pan.
- Saute garlic just until color starts to change to a light gold.
- Add the zucchini to the pan.
- Saute until tender, about 5-10 minutes.
- Add herbs, mix well, and continue to cook for another minute.
- Add salt and pepper to taste.

What You Need to Roast Zucchini
- 2-3 medium zucchini , sliced
- 1/4 cup olive oil
- 1/4 cup cup fresh herbs, if desired
- Salt and pepper
- 1-2 cups other chopped vegetables such as peppers, onions and/or mushrooms
- Nonstick cooking spray
How to Roast Zucchini
- Preheat oven to 400 degreesF.
- Lightly grease a 9 by 13 inch roasting pan with nonstick cooking spray.
- Place the vegetables in the prepared roasting pan.
- Toss vegetables with olive oil, herbs and salt and pepper.
- Place pan in preheated oven and bake for approximately 30 minutes, or until tender.
