Introduction
Rotisserie chicken can be purchased in specialty markets and most grocery stores, but it's cooled down by the time you get it home. If you want fresh, hot rotisserie chicken, you can make it yourself. You'll need a grill with a rotisserie attachment. If your grill did not come with an attachment, you can buy a generic one at any store that sells grills. -
Step 1: Prepare the Grill
Follow the instructions to attach your rotisserie, and test it to make sure it rotates. Preheat the grill to medium high, and set a roasting pan with an inch of water under the spit to catch drippings and prevent flare ups. Make sure you have plenty of gas or charcoal on hand to keep a constant heat under the chicken. -
Step 2: Prepare the Chicken
- Clean the chicken, making sure to remove the innards.
- Truss the chicken so that the wings and legs are held close to the body.
- Season the chicken with salt and pepper.
- Insert the spit through the chicken, from back to front.
Step 3: Cook the Chicken
- Place the spit on the rotisserie and turn it on.
- Melt 1/4 cup butter and 1/4 cup water.
- Begin basting the chicken with the butter and water mixture after it has been cooking for 10 minutes. Continue to baste every 15 minutes until done.
- The chicken will take 1-1 1/2 hours to reach 165 F. Use a meat thermometer to make sure it's done.
