Cooking Pork Ribs in a Dutch Oven requires a coating of olive oil in the bottom, add garlic, onion, green pepper, salt and pepper and top with the ribs. Add dried Italian seasoning on top of the ribs and cover. Place the oven on hot coals on the grill and add coals to the top of the lid. Cook for an hour and remove the lid and drain. Add bottled barbecue sauce and replace the lid. Add new coals and cook for 15 minutes longer.
