Lentils are a small flat legume, about 1/8- 1/4 inch in diameter. They come in green, brown, yellow, and red varieties, which can be used interchangeably, with only a slight variation in taste. Brown lentils are used commonly in Italian lentil soup, while yellow lentils feature prominently in Indian dal. Lentils are high in protein and complex carbohydrates, and are a good source of B vitamins and vitamin A.
Step 2: How to Cook Lentils
The basic preparation for lentils is the same, no matter what the end recipe. each recipe may use a different liquid, or mix in additional ingredients at certain points, but all require the lentils to be cleaned and boiled as follows:
- Rinse the lentils thoroughly in cold water, removing any leaves, twigs, or stones
- Cover the lentils with cold water, using 4 cups of water for each cup of lentils.
- Bring the water to a boil, cover, and reduce to a simmer.
- Cook the lentils for 35-45 minutes, or until tender.
