How To Cook Thick Lentil, Garlic and Butternut Squash Stew
Red lentils provide a good source of protein in this vegetarian stew recipe. Celery and garlic are sauteed until soft and tender, then tomatoes, lentils, and butternut squash are added to the pot. Lentils are a small flat legume, about 1/8- 1/4 inch in diameter. They come in green, brown, yellow, and red varieties, which can be used interchangeably, with only a slight variation in taste.
