Knife Skills - How to Debone a Chicken Breast

Ingredients and Equipment

Step 1: Locate the Fat Along the Ribs

Locate the line of fat along the rib bones of your chicken breast. Use your boning knife to cut along the line of fat, perpendicular to your cutting board, in front of the bones. As you cut, the meat will fall away from the bone.http://www.youtube.com/watch?v=4rfswqfxRCo 

Step 2: Debone the Chicken Breast

When you hit the keel bone, or breast bone, with your knife, turn the knife parallel to the cutting board and continue to cut under the meat so it comes away from the bone. Use the tip of your knife to cut away the remainder of the meat from the bone.http://www.youtube.com/watch?v=4rfswqfxRCo 

Step 3: Remove the Tendon

Remove the chicken's tendon and the tender it is attached to with your fingers to cook or to save for another dish. You are now ready to make the chicken dish of your preference!http://www.youtube.com/watch?v=4rfswqfxRCo
