In this video, Mahalo expert Judith Jones demonstrates how to make baked eggs with tomatoes.
What You'll Need
2 large eggs
- 2 tbsp half-and-half
- 4 tbsp parmesan cheese, grated
- 2 tbsp tomato sauce
- 1 tsp butter
- Salt and pepper to taste
- 2 large ramekins
- Large baking dish or tray
Preparation
Preheat oven to 350°F (176°C).
- Sprinkle half of the grated parmesan cheese into the two ramekins so that the bottom of each ramekin in covered. Save the other half of the cheese for later.
- Add one tablespoon of tomato sauce to each ramekin and spread to cover the cheese.
- Crack one egg directly into each ramekin so that the
raw eggs sit on top of the cheese and tomato sauce.
- Add a pinch of salt and pepper to each ramekin to taste (optional).
- Add one tablespoon of half-and-half to each ramekin.
- Sprinkle the rest of the parmesan cheese on top of the eggs in each ramekin.
Cooking Process
Place ramekins on baking dish or tray.
- Bake 12 to 15 minutes until white crust is formed on top of the eggs.
- Remove from oven, let cool and serve.
