In this video, Mahalo expert Judith Jones demonstrates how to make a cherry tomato omelette with herbs.
What You'll Need
- 3 medium eggs
- 2 tbsp cherry tomatoes, sliced
- 2 tbsp olive oil
- 1 1/2 tbsp chives
- 1 tbsp parsley
- Salt and pepper to taste
- Large bowl
- Spatula
- Whisk
Preparation
- Set burner to medium. Heat nonstick frying pan.
- Add olive oil to frying pan. Spread it around so that it covers the entire surface of the pan.
- Pour eggs into the large bowl and whisk. Add a pinch of salt and pepper to taste (optional). You can also add milk if you like, but Judith prefers the eggs by themselves.
Cooking Process
- Add cherry tomatoes to frying pan. Let cook for 1-2 minutes.
- Add the parsley and chives and let them cook with the tomatoes for 1 minute, then add egg mix to the pan. Spread the eggs around so they cook evenly.
- Let the eggs cook for 1-2 minutes. Work your way around the edges with the spatula to make sure the eggs don't stick to the pan.
- Flip the omelette quickly so it doesn't tear.
- Let the eggs cook to your liking, then slide the omelette on to a plate and serve.
