Correctly Cracking an Egg

While there is a common misconception that cracking an egg on the side of the bowl is the best approach, it is safer to crack the egg against a flat surface in order to prevent contamination from the shell. A good approach is to tap the egg gently on the counter until there's a small dent then use your thumbs to separate the egg shell. 

Tips for Cracking Eggs

  • Crack the egg into a second bowl before you add it to the mixing bowl. That way, you can examine the contents of the egg before potentially contaminating the other ingredients.c
  • If pieces of shell fall into the bowl, you can remove them using another, larger piece of the broken shell.c
  • To crack with one hand, pick up the egg and hold it with all five fingers. Your thumb and index finger should be holding one end while your middle and ring fingers are pressing the other end of the egg against the heel of your palm. Crack the egg against a flat surface, making sure that the point of impact is between your thumb and pointer finger. Ease the egg apart, keeping your thumb and index finger in the same position.c
