Introduction
- Lamb's association with Easter may stem from its association with Passover, or it may have arisen from the fact that it is a traditional spring food. Lambs are born in March or April, and usually reach the table the following year. Although most Americans eat ham for Easter, roast lamb is more popular in the rest of the world.
Step 1: Easter Lamb Overview
- Americans, on average, only eat a pound of lamb a year per person. Consequently, most home cooks are not familiar with how to cook lamb. A lamb roast is actually very simple to prepare, and is traditionally served with gravy, mint jelly, and roasted potatoes.
What You'll Need to Roast Lamb
- 5-6 pound bone in leg of lamb
- 2 tablespoons olive oil
- 2-4 cloves of garlic, slivered
- Mixture of 1 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon rosemary
- Paring knife
- Roasting pan
- Meat thermometer
Instructions for Roasting Lamb
- Preheat oven to 450 degrees.
- Pierce lamb with paring knife 8-20 times, depending on how much garlic you're using, and insert a sliver of garlic in each slit.
- Rub lamb first with oil, then seasoning mixture.
- Roast the lamb for 20 minutes, then reduce the oven to 325 degrees until the meat thermometer indicates that the lamb is done. This well generally take about 1 1/2 hours for medium rare.
- Rare: 140 degrees
- Medium rare: 145 degrees
- Medium: 155 degrees
- Well done: 165 degrees
- Allow the lamb to sit about 15 minutes before carving to let the juices settle.
