How to Cook Chicken

Introduction

Step 1: How to Roast Chicken

A whole chicken can be roasted quickly and simply unstuffed. If you have them on hand, pierce two lemons with a fork several times and place then inside the chicken along with any fresh herbs you have handy.

  1. Preheat oven to 375 F
  2. Truss the chicken, and place in a roasting pan.
  3. Season with salt, pepper, and poultry seasoning.
  4. Combine 1/4 cup water with 1/4 cup melted butter, and pour over the chicken.
  5. Roast for 20 minutes per pound, basting every 15 minutes for the first hour.

Step 2: How to Braise Chicken

What You Need for Braised Chicken

  • 2 tablespoons butter
  • 1 onion, chopped
  • 5 pounds of chicken pieces
  • 1/2 red wine
  • 1 1/2 cups chicken stock
  • 1 bay leaf
  • 4 springs parsley
  • 2 teaspoons thyme
  • Salt and pepper, if desired

How to Make Braised Chicken

  1. Melt butter in a large skillet or dutch oven
  2. Saute the onion until soft.
  3. Brown the chicken in the butter
  4. Add the wine, cassis, stock, bay leaf, parsley, thyme, and salt and pepper
  5. Cover and simmer for 45 minutes.
  6. Remove chicken to a platter
  7. Strain broth
  8. Bring the strained broth to a boil and reduce liquid by two thirds.
  9. Return chicken to pan to reheat.

Step 3: How to Grill Chicken

Preheat the grill, and season the chicken with salt and pepper. Place the chicken on the grill bone side down for 10 minutes. Flip the chicken and cook the other side for 10 minutes. Cook each side an additional 10 minutes, then apply barbecue sauce to each side, and cook for 5 minutes a side. Check for doneness with a meat thermometer and continue to flip and cook until the meat thermometer reaches 165 F.
