Add the salt to the water in a pot.
Bring the water to a boil.
Add the barley.
Cover the pot, and lower the heat to a simmer.
Cook until tender, about 40 minutes. If you used hulled barley, rather than pearl, it will take 90 minutes to cook.

Substitute broth or stock for the water.
Substitute rice for half of the barley.
Add 1/2 cup of nuts or dried fruit after cooking.
