A popular summer fruit, the honeydew is a sweet, juicy melon with green flesh that tastes similar to cantaloupe. As it ripens, the honeydew's waxy skin turns from green to white to pale yellow.
Selecting honeydew
The buyer should avoid green skinned honeydew, but those with white skin are fair game since, unlike most other melons, the honeydew will continue to ripen after harvest if kept at room temperature.
The heavier a honeydew is, the higher its sugar content will be. Those that weigh about five pounds will have the best flavor.
Honeydew should be firm, but yield to slight pressure at the stem.
