Head Cheese

Head Cheese, is a jellied loaf or sausage, also called souse and brawn, made with meat from the head of a pig, calf, mature cow, or sheep. The gelatinous consistency of head cheese can be the result of cooked bones and tendons, or the addition of prepared [Gelatin|gelatin]] to the recipe.

Ingredients

Head cheese typically calls for a split pig's head, and can include feet, heart, tongue and pork snouts. Other common ingredients are unflavored gelatin, onions, pickles, peppercorns and carrots. Accents include bay leaves, salt, sugar and [Nutmeg|nutmeg]].

How to Make Head Cheese

A basic preparation of head cheese usually involves boiling the head and other meat, bone-in, for hours, until the fat and tendon have infused the meat and water has dissolved. The concoction is then seasoned, placed in molds and refrigerated.
